Homemade Pumpkin Spice Latte Recipe!

I saw this posted on Apartment Therapy a few weeks ago and knew that I HAD to try it!  I love pumpkin spice latte’s from Starbucks, but at $5.00 a cup! Really?

This homemade version only cost me $4.00 to purchase some ingredients (whipping cream, canned pumpkin and pumpkin spice) and the rest of the needed ingredients I already had on hand.  So, for $4.00 I will be able to enjoy MANY cups of this desired drink (all year round)!  And it only takes about 5 minutes to make! :)

Here is the recipe that I used, it makes two cups:

Ingredients

Ingredients:

2 cups milk
2 tablespoons canned pumpkin
2 tablespoons sugar
2 tablespoons vanilla extract
1/2 teaspoon pumpkin pie spice
1 cup of strong brewed coffee

In a saucepan combine milk, pumpkin and sugar.  Cook on medium heat, stirring, until steaming.  Remove from heat and stir in vanilla and pumpkin spice.

Next, whisk the mixture very well until foamy.

Transfer mixture into mug, filling only half the cup, and top the rest with coffee.  Top with whipping cream and pumpkin spice or cinnamon.

Mmm… It’s oh so good, and tastes just like the Starbucks version.

The thing I was concerned about, and actually thought was a typo, was the amount of vanilla extract it called for – but I just went with it, and it’s the perfect amount!   Also, the first time I made it I tried it with just a 1/2 cup of coffee, but found it too sweet.  That’s why I adjusted the recipe to include more coffee, if you prefer it sweeter, you may want to make it with less coffee. :)

Yum! One question: what are you doing with the rest of the can of pumpkin? Baking with it? Freezing it? I think I’d feel silly opening a can of pumpkin for 2 tbsp!

Cate: Yup, I will be baking with it! It’s in a bowl in the fridge right now and so far I have made about 6 cups or so (not all for me! lol).

Looks great, even though I’m not a fan of pumpkin flavoured stuff myself. I did once try the homemade version of an iced capp though, with hilarious results as I messed up the converstion from sugar to sweetener. It tasted so horrible I haven’t had the guts tried it again yet!

But what if you don’t have pumpkin spice? I have all the correct spices, just no pre-mixed like your container.

Hmm… I wonder what the ratio is of cinnamon-cloves-nutgmeg! I should look it up and make my own!

OMG!! You just gave me the best idea for replacing the Starbucks Christmas Gouger (aka Steamed Eggnog). To make it myself. After all, it’s jut HOT eggnog, for crying out loud!

Shannon: I haven’t tried making it before hand. I don’t see why it couldn’t work – you may want to try it, before you bring it to work :)
