Broccoli Soup Recipe

I made this soup last week for lunches and it was a huge hit, so I thought I would share it with you.

BSOUP

Ingredients:

1 tbsp butter
2 onions, chopped
2 medium sized potatoes, peeled and coarsely chopped
2 cups vegetable stock
3-4 cups frozen broccoli pieces
1 can (375ml) evaporated skim milk
Salt and pepper to taste
Optional: chopped green onions

Preparation:

In a large saucepan, melt butter over medium heat.  Add onions and potatoes, stirring often until onions are soft (about 10 minutes).  Add stock, salt and pepper; bring to a boil.   Reduce heat to medium, cover and simmer until potatoes are tender (about 15 minutes).  Add broccoli pieces, cover and cook for 5 minutes.

Transfer soup into a food processor or blender (I used a blender) and puree soup until smooth.  Return to pan; stir in evaporated milk and heat through.

Serve sprinkled with green onions.

I served this for dinner one night with cheese buns and crackers.  Super easy to make and tastes really good!!

I am definitely going to try this! I have yet to use my blender and I do like broccoli – I just never thought of making a soup. YUM! Thanks for the tip :)
